Delightful Breakfast

A good breakfast gives you a boost of energy to start your day. A hot meal every morning is always something to look forward to. Here are three breakfast meals I have prepared at home.

Mondays are often manic. Everyone is rushing to go work. The first day of the work week should start right. So, no matter how much everyone is rushing to go, I make sure nobody leaves the house without a good breakfast.

This Monday's breakfast is corned beef, Pangasius fish fillet, rice, ripe mangoes, and a refreshing orange juice.



Fried eggplant, pork adobo, and a cup of rice is Tuesday's breakfast. These are all classic Filipino dishes. The eggplant was first boiled, crushed, then coated with beaten eggs before frying.

The pork adaobo is what we, the Bisaya people, calls "adobong pina-uga". Pina-uga means dried. This is usually done by adding vegetable oil while the soup is evaporating.




Egg omelet and fried fish with soy sauce and rice.  A typical Filipino breakfast.


The egg omelet was prepared by mixing in sauteed tomatoes with eggs. At least, that's how I prepare it.



This morning's fried fish is Danggit. Instead of salt, however, I used Cajun powder to season the fish.


This is best enjoyed with soy sauce mixed with a squeeze of lemonsito and chopped red onion.
